Snacks for Toddlers

WOW, I wish I knew of this site when I was running my Day Care a few years back. 

For all of your great moms that are looking for fun, healthy ways to fill up your little toddlers belly, please visit Snacks For Toddlers.  The site is filled with great food ideas for our hungry and at times picky little ones.

Shhh, don’t tell my 6 year old, but I often run to the Snacks For Toddler site and come up with GREAT idea’s for what to searve him for snacks.  :)

Dinner in 30 minutes or Less!!

As a busy mom of 4 children and also the wife of a busy husband the LAST thing I want to worry about is “what’s for dinner”. Usually I work out a meal plan in advance and have all of my meals already cooked on Sunday, and frozen or refridgerated to re-head and serve throughout the week.

I wanted so share with you just a few of my all time Favorite quick meals:

Baked Honey-Mustard Chicken

  • 3 tablespoons honey
  • 3 tablespoons yellow mustard
  • 8 chicken thighs, rinsed and patted dry
  • salt
  • freshly ground pepper
  • 2 cups fresh bread crumbs
  • 1/4 cup Italian herb seasoning mix

Heat oven to 350F. Combine honey and mustard in a small bowl. Brush over chicken thighs. Season with salt and pepper

Combine bread crumbs and seasoning mix on plate. Roll chicken in crumbs to coat.
Place chicken thighs in a greased baking pan. Bake until juices run clear, about 30 minutes.

Polly’s Turkey Pasta Recipe

  • 8 ounces pasta
  • 1/2 cup mozzarella cheese — grated
  • 2 cups broccoli
  • 1 clove garlic — chopped
  • 1 cup turkey — cooked and chopped
  • 1/2 cup nonfat yogurt
  • salt
  • oregano

Cook pasta according to directions. In mean time, grate mozzarella. Cook the broccoli with garlic and small amount of water in microwave for approximately 6 minutes. When pasta is cooked, drain water off and return pasta to pan. Add cheese, broccoli, yogurt, turkey, and oregano. Add salt to taste.

Spanish Baked Fish

  • 1 pound fish fillets-snapper or sole
  • 1 can (8-oz size) tomato sauce
  • 1/2 teaspoon chopped garlic
  • 1/2 cup sliced onions
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon cumin

Spray baking dish with nonstick cooking spray. Arrange fish in dish. Mix remaining ingredients and pour over fish. Bake at 450 degrees for 10-20 minutes or until fish flakes easily.
